Ingredients: -4 whole wheat wraps -1 ½ cups of pesto -1 can of red kidney beans -5 medium tomatoes, diced -1 medium onion, diced -1 green bell pepper, diced
Directions: -Combine raw vegetables, kidney beans, and 4 tbsp of pesto in a medium-sized mixing bowl. -Line each wrap equally with remaining pesto. Then line the wraps with equal amounts of the vegetable/bean mixture. Tip: Place veggies in the center of the wrap in a thick, straight line. This makes it easier to fold in the next step. -Start by folding in the left and right sides of the tortilla. Then bring up the bottom and secure in place like a diaper.
