Dry Ingredients: 2 cups of oat flour 1/2 cup brown sugar 1 tsp baking powder 2 1/2 tsp ground cinnamon 1/2 tsp nutmeg 1 tsp salt
Wet ingredients: 1/2 cup of water 2 tsp of vanilla extract 2 cups of blended bananas 1/3 cup of vegetable oil 1 1/2 tbsp of white vinegar 3 tbsp of fresh crushed ginger
Cake Directions: -First, mix all dry ingredients in a large mixing bowl. Set aside. -Next, mix all wet ingredients in a high speed blender or food processor until smooth. -Combine wet and dry ingredients. Mix well. -Smooth mixture out into a lightly oiled medium-sized cake pan. -Bake at 350f/200c for 30-35 minutes. -Remove from oven. Cool for 15 minutes before topping with icing.
Icing Ingredients: 1/3 cup vegetable oil 1 tsp vanilla extract 2 tsp coconut milk 1/4 cup of brown sugar 1 cup of powdered sugar (or make your own by whisking 1 cup of brown sugar + 1 tbsp of corn starch)
Icing Directions: Mix everything until smooth. The icing should have a thick consistency.
