Stir-Fried Cabbage in Spicy Herb Sauce (Serves 2-4)
Cabbage: 1 whole head of cabbage, shredded 2 tsp of vegetable oil
Directions: -Fry the cabbage in vegetable oil until slightly soft, about 5-7 minutes. -Set aside in a large mixing bowl.
Herb Sauce: 1 medium onion, diced 3 tsp of minced ginger 3 garlic cloves, minced 1/2 tsp of cumin 1/4 tsp of chili powder 1 tsp vegetable oil 1/2 cup of cilantro 1/2 cup of parsley 2 TBSP soy sauce 2 TBSP lemon or lime juice 1/4 cup of water 1/2 tsp salt 1/2 tsp pepper
Directions: -Sautee the onion, garlic and ginger in vegetable oil until soft, 5-7 minutes. Cool for a few minutes before adding to the blender. -First, combine 1/4 cup water, soy sauce and lemon/lime juice in the blender. -Next, add herbs and onion mixture to the blender. Blend until mostly smooth (there should still be tiny pieces of herbs in tact at the end) -Then, toss the cabbage with the sauce, mix well, and enjoy!
