Rice, bananas, tomatoes, onions, peppers and curry powder???
Trust me - don’t judge this one until you try it! Granted, the ingredients do not seem like they would work well together, but will you be absolutely shocked to find out how delicious this rice bowl really is! After just one bite, it immediately became my favorite way to eat rice.
The combination of lovely flavors in this recipe is simply incredible. For anyone who has done a good amount of cooking, you know that the most unlikely mixtures often turn out to have the best flavor. My Curried Banana Rice recipe is proof of this! If it doesn't make sense, chances are that it will be delicious!
Have an open mind and whip up this easy and healthy dish for dinner tonight. Your taste buds (and digestive system) will thank you!
Ingredients: -1 ½ cups rice + 3 cups water -1 TBSP vegetable oil -2 large onions, diced -2 large green peppers, diced -4 large tomatoes, diced -1 cup of peanut butter -2 TBSP sweet Thai chili sauce -3 TBSP curry powder -1 TBSP salt -1/4 cup of water -3 large bananas, blended -3 large bananas, sliced
Directions: -Boil rice until soft and fluffy. -While rice is cooking, in a large skillet, sauté the onions and green peppers in 1 TBSP vegetable oil until soft and fragrant. -Add tomatoes, ¼ cup of water, peanut butter, blended bananas, curry powder and salt to the skillet. Cook for 5 minutes, stirring often. Then remove from heat. -Combine rice and vegetable/banana mixture in a large mixing bowl and stir well. -Top with sliced banana. Serve and enjoy!
